Fresh pineapple, cored and diced (one per pie)
2 crust unbaked pie shell
3/4-1 cup sugar
3 Tbsp (heaping) cornstarch
egg
milk
Chunk pineapple in squares. Place in saucepan and cook over medium heat (no water added) until juices cook out. Pour juice off in bowl adding the cornstarch. Mix together. Add sugar to pineapple in saucepan and stir. Place cornstarch mixture back in pan with pineapple continuing to cook over medium heat until thickened. (Do not overcook as cornstarch will cause it to thicken more as it cools!). Pour into unbaked crust. Top with other crust. In small bowl, mix egg and milk. Brush top of crust with this mixture. Prick top crust with fork. Place in 350 degree oven for 20-25 minutes until nicely browned. Makes one pie.
